How does a mountain cheese become lactose free?

Basically, it is a natural process. The older a cheese becomes and the longer it ripens, the less is lactose in it and the less milk sugar contains in the product. During the maturation process, Lactose is broken into glucose and galactose and transformed into lactid acid. After a ripining of approximately three to four months a mountain cheese is almost lactose free. In Germany, a cheese can be indicated as lactose free, if a cheese product contains less than 0,1 per cent of lactose. Accordingly our mountain cheese products, which are at least ripened five to six months, are lactose free and can be consumed safely and without concerns.

Lactose is commonly used by the food industry as both flavouring souce and flavour enhancer. On the basis of its great water binding capacity it is also offen used as a binder.
